Shop at a local market with the chef, ride a bamboo basket boat through the Cam Thanh coconut forest, then cook and eat a 7-dish Hoi An meal – papaya salad, spring rolls, rice pancakes, clay-pot fish and more.

This half day turns you into a Vietnamese cook for a few hours. It starts at a local market, where the chef walks you through the noise and colour, introduces you to the sellers and shows you the ingredients for the lesson.

Then it's out to Cam Thanh for a bamboo basket boat through the coconut forest, a turn at the paddle and a lively basket-boat performance. Back at the restaurant, after a welcome drink, the chef teaches you to cook local dishes – and the reward is sitting down to eat the seven-dish meal you've helped make.
