A morning in Hoi An's best-known vegetable village, from market stall to garden bed to kitchen.
You set off by bicycle to a local market, where your guide explains the vegetables used in everyday cooking and in traditional medicine. Small country roads lead through rice fields – stop to photograph buffaloes, cows and farmers at work – to Tra Que, a traditional craft village.
There you sip E water, a herbal drink from the gardens, put on a farmer's outfit and conical hat and try the village's organic farming methods. A head, shoulder and foot massage with fresh garden herbs follows, and then the cooking class: decorative flowers carved from carrots, tomatoes and spring onions, five local dishes, rice and morning glory with garlic – lunch is what you cook.
